Chicken Crust Pizza

Late night scrolling on Tik Tok (shout out to @ketodiet7786) brought me to this delicious protein packed beauty!! I’m not going to lie, I did have some doubts of how it would turn out and doubted my ability to do this well, but I’m glad I didn’t let that hold me back.
I LOVE pizza. I know it’s such a cliché, but it is for a reason, right?? Something about all the carbs and cheese married together with tomato sauce, that makes it like nothing else. I know I don’t have to tell you how amazing pizza is, so I will just tell you why this one is different from the rest.
The crust, yes, the crust is guilt free and made out of chicken! I know, seems weird and kind of impossible, but with a little egg, cheese and magic, voila! You have yourself a protein packed and guilt free pizza. This is so much more delicious than I thought it would be. But don’t take my word for it! Try it out yourself! And since I know no one ever reads these and skips right to the pictures and recipe, I will cut right to the chase.
Here are your ingredients:

Don’t judge me on my store brand products. This momma is on a budget! So you mix 1 can of chicken, 1 egg and 1/2 cup parmesan cheese, along with some seasonings (like Italian seasoning, Oregano, Basil, salt, pepper, that kind of stuff), and you end up with something like this:

Put that on a cookie sheet, or a pizza sheet if you have one, lined with parchment paper, and make it into whatever shape you want. I had to try both round and square, to see if the shape made them taste any different. Results a bit later. Pop it in the over for 20 min at 425 degrees. Then, you end up with something like this:

After that, top it with whatever ingredients you like! I used store brand (of course) pizza sauce. I think you probably need to add more than you think you do, but I like my pizzas a little more saucy. I also threw some tomatoes, jalapeños and more chicken from a can on top. This is what it looked like:

My pizza did not have jalapeños on it, because my body hates me and the older I get, the more it protests spicy things. It’s a very sensitive subject right now, and I’m going to counseling to learn to cope with a life without spicy food. But, more on that later….
I threw the pizzas back in the oven for…..maybe 10-15 minutes. I’ll be honest, I didn’t count. I just checked on them every 5 min and took them out when they were melted and looked right, and I ended up with these!

I thought they turned out so cute! And they were the right size for a personal pizza for me and hubby. I think I could have left them in for a tad longer, but the crust held up so good! Here is a picture of it from the bottom:

I paired them with some salads, because we have to have veggies each meal in this house, and it was a really fun guilt-free protein packed meal!

And just in case you were wondering, the round pizza tasted better. I mean, why mess with the original?? Or was it because of the forbidden jalapenos?……hmm…….I’m gonna say it was because of the shape. It’s just more logical.
For those that didn’t want to hear my cute antics, here is the recipe without the fluff.
Chicken Crust Pizza Recipe:
1 9.75oz Can of Chunk Chicken Breast
1 Egg
1/2 Cup Parmesan Cheese (shredded or grated will work)
Italian spices to taste
1 jar of desired pizza sauce
1/4 cup shredded mozzarella cheese
Whatever toppings you choose! (Pepperoni, sausage, tomatoes, bell peppers, black olives…etc. but not pineapple. Cause that’s gross)
Mix all ingredients together in a small bowl with a fork. Once mixed thoroughly, transfer to a cookie sheet (or pizza sheet) lined with parchment paper. Spread into desired shape and thickness. Place in a preheated oven at 425 for 20 minutes. Remove pizza crust and top with desired amount of pizza sauce, leaving a 1/2 inch ring on the edges. Top with cheese and your favorite pizza toppings. Place back in the oven for 15-20 minutes, or until golden brown and cheese is melted. Pair with a salad or veggie of your choice, and ENJOY!!
